Vegan Veggie Soup

Who says being a Vegan can’t be fun?! A plant based diet to some can sound pretty boring. However, I am here to personally testify that indeed being a vegan in NOT boring. I have always been a vegetarian so transitioning to a vegan lifestyle was pretty seamless. I am not gonna lie, I dreamed of cheese- Mozzarella, Cheddar, Pecorino Romano, Pepper Jack…oh sorry I got carried away. Let me get back to the cheese, oh yes I had to give up ALL dairy, that included soy, eggs and butter. Olive James had a milk protein allegry and I had to change my diet 100% if I was going to be able to nurse her without issues. So present day- 7 months later and I am mostly vegan, though I am slowly incorporating dairy back in my diet.

I must admit I am not a huge fan of recipes. I like to just put together food that I enjoy and I kinda play it by ear. That’s not to say that I don’t follow recipes, I am just stating I just enjoy making up my own. So I will be happy to share with all you guys what I enjoy eating. Everything can be modified to your satisfaction and any ingredient can be substituted.

*Disclaimer* I am by no means against “meat eaters” my husband Will Taylor is probably the biggest Carnivore I have ever met. With that being said…you can also add meat to any recipe I post.

Soup is one of those meals that hits the spot. Whether its cold outside, warm outside or just perfect- soup is a meal that can satisfy even the biggest eater. I always like to have a few side options in the pantry that accompany a good healthy soup. Bread, homemade croutons (recipe available by request), corn chips, crackers and always some hot sauce. Tabasco is always my go to.
